When you’re planning your next brunch, family breakfast or you just want to amp up your own morning meal, put these air fryer breakfast potatoes on the menu!

They taste just like the breakfast potatoes you’d get at your favorite restaurant, but healthier and without all the grease. Plus, they cook up quickly. In the time it takes to make coffee and a couple eggs, your new favorite side dish will also be ready.

Ingredients Needed

  • potatoes – russet, red or Yukon gold potatoes will all work for this recipe. Potatoes provide potassium, vitamin C and fiber, and keeping the skin on will double their fiber content. Try to cut your potatoes into the same-size chunks for even frying.
  • oil – I recommend using olive or avocado oil. This helps the potatoes crisp up and helps the spices stick to the potatoes.
  • herbes de provence – this traditional herb mixture from the Provence region of France includes a combination of thyme, rosemary, savory, marjoram and oregano. It pairs perfectly with potatoes and is easily found in the spice aisle of most grocery stores. You can also use rosemary or Italian seasoning if you prefer.
  • spices – sea salt, pepper, garlic powder and onion powder combine to bring out the flavor.

How to Make

Prep your potatoes – Wash and cut potatoes into even cubes, about ½ inch. Try to make all the potatoes about the same size so they cook evenly. And there’s no need to peel them!

Toss with oil and seasoning – Add your potatoes, oil and seasoning into a bowl and toss to combine. 

Air fry – Preheat your air fryer if required. Add potatoes to the air fryer in a single layer and cook at 400°F for about 15 minutes, tossing every 5 minutes. Watch them closely for the last 2-3 minutes to make sure they don’t burn.

Serve – Serve breakfast potatoes immediately alongside your favorite breakfast entree.

Variations

I love these crispy breakfast potatoes just as they are, but here are a few ideas to switch up the flavors:

  • more garlic – love garlic like I do? Leave out the herbs and increase garlic powder to 1/2 teaspoon or add freshly minced garlic.
  • paprika and cayenne pepper – spice it up by adding 1/2 teaspoon paprika and 1/8 teaspoon cayenne pepper, again leaving out the herbs. For more spice you can also top with your favorite hot sauce!
  • taco seasoning – substitute a sprinkle of taco seasoning on the potatoes before baking and then squeeze fresh lime juice on after baking for a Mexican-inspired side!
  • cheesy potatoes – add some shredded cheese in the last few minutes of air frying for a cheesy variation.
  • potatoes O’Brien – add in some diced red and green bell pepper and yellow onion for fun and flavorful variation.

What kind of oil is best to use?

I prefer to use olive or avocado oil, but you can use any oil you’d like.

How long should I cook breakfast potatoes in the air fryer?

This depends on the temperature and the specific air fryer you have. I have the Ninja 4 qt air fryer and would recommend starting with 15 minutes at 400°F and adding more cooking time in one-minute increments as necessary.

How do I prevent my breakfast potatoes from getting soggy?

If your air fryer potatoes are turning out soggy it is likely because you are over-crowding your air fryer basket or using too much oil. Also, once your potatoes are done cooking, transfer them to a place and don’t leave them in the air fryer closed otherwise they will soften from steam. Another tip is to season your potatoes right before cooking. If potatoes sit too long with salt, it will draw out moisture and inhibit the crisping process.

Why won’t my breakfast potatoes get crispy?

If your potatoes aren’t crisping up the way you’d like it’s likely because your air fryer is over-crowded or you cut them unevenly. I suggest cutting them all as close to the same size as possible. This will ensure that they are evenly cooked and browned.

Can I peel the potatoes before air frying?

Of course! If you prefer to peel your potatoes before cutting and air frying them, feel free. Keeping the skin on saves time, adds texture and doubles the potato’s fiber content.

How to Store Leftovers

I could eat an entire basket of these air fryer breakfast potatoes by myself and usually never have leftovers. But if you decide to make a bigger batch and do have leftovers, store them in an airtight container in the fridge for about 3 days.

For reheating, just place them in the air fryer in a single layer and cook at 375°F for 1-2 minutes. You can also reheat them in a toaster oven, regular oven or microwave until warm. Just note that the potatoes will get soft if you reheat them in the microwave.
